Enjoying summer friends and vegetables

It’s summer and boy, have I had my share of fresh fruits and vegetables. I love vegetables and fruits; my family can attest to it. They know that you must eat your vegetables – they’re good for you and that we must have a green vegetable at almost every meal. They also know that fruits are good, too!
Why all the fuss? Fruits and vegetables are excellent sources of fiber, vitamin A and C. Vitamin A and C are important, in part, because of their role as antioxidants. The benefits of fiber include a reduced risk of constipation, diverticulosis, and hemorrhoids; help in controlling blood sugar; and a possible lower risk of developing some forms of cancer. Fruits and vegetables are also naturally low in fat (except for avocados), saturated fat and sodium, and are loaded with different phytochemicals. Phytochemicals are of interest to many researchers because of their potential health benefits.
Do you have an abundance of corn or tomatoes and don’t know what to do with them? Below are recipes I have used and like: fresh corn salad and tomato rice. I prepared salmon, tomato rice and string beans recently. I used whole wheat rice to increase the nutritional value of the dish. I have also used frozen corn instead of fresh corn in the fresh corn salad recipe. Why not give these a try?
